Weeks ago, been wanting to go out to find some baked goodies (specifically chocolate chip cookies) to satisfy my cravings, pero syempre, it was not that easy since we were on ECQ during that time and for sure stores and bakeshops are close or in minimal production.
I tried looking online (syempre PM is the key! 😂) but sad to say, it was either sold out or unavailable, malas! LOL. This was even before my friend started experimenting and baking her own cookies, sobrang wala sa timing ang cravings ko! 😂
But because I’m determined to satisfy my cravings, I tried looking for an easy peasy recipe online, went on my stash, and started the whole process. Good thing I have all the ingredients, except for one – the chocolate chip. So I went out, drove my way to the nearby store, and did my 2-week groceries. (sinabay ko na syempre, work smart tayo, LOL).
So here’s what I did, if you’re interested to do you own microwaved cookie. You should try this soft, chocolatey, moist mug cookie. Super dali lang!
Ingredients:
- 1 tablespoon melted butter or coconut oil
- 1 tablespoon granulated sugar
- 1 tablespoon brown sugar
- pinch of salt
- 1 egg yolk
- 3 tablespoon all-purpose flour
- 2 tablespoons chocolate chips (regular size or mini)
- Vanilla
- 1/4 teaspoon baking powder
Instructions:
- Mix all the ingredients together in the mug (to avoid the batter being crumbly, mix the butter, egg yolk, sugars and salt first before gradually stirring in the flour and adding the chocolate chips).
- Microwave for one minute. The top may seem undercooked but if you gently press the top and it lightly springs back, it’s perfect (don’t overcook or it will be dry and tough in spots).
- Serve warm with a scoop of vanilla ice cream, if desired.
Presto! You have your chocolate chip mug cookie, served hot and moist, as easy as that! Cravings satisfied! 😋🤤
